What’s the difference between hard salami and Genoa salami?

This recipe calls for Genoa salami. Genoa salami has a soft, smooth texture, whereas hard salami is more firm and dry. As far as taste, Genoa salami has a tangier, richer flavor than hard salami. I like both types of salami, but for this recipe, i prefer to use Genoa salami.

  • 4 ounces sliced Genoa salami (can be found in the deli section at the grocery store)
  • 32 slices of pepperoni
  • 4 ounces sliced deli ham
  • 6 slices of provolone cheese
  • 2 large tomatoes, sliced thin (vine or Roma tomatoes work best)
  • ¼ cup sliced banana peppers (drained and patted dry)
  • 2 cups of shredded iceberg lettuce
  • 2 ½ tablespoons Italian dressing
  • ⅓ cup of mayo

Instructions:

  1. Mix the sauce: In a small bowl, mix the Italian dressing and mayo together. Set aside.

  1. Prep the Rolls: Using a serrated knife, carefully slice the Hawaiian rolls in half horizontally, keeping the rolls attached to each other to form a top and bottom layer. Place the bottom layer on a serving tray or baking sheet.

  1. Add a layer of salami, followed by pepperoni, ham, and provolone cheese.

  1. Drizzle the mayo and Italian dressing sauce evenly over the fillings.
